Beaches and Cream

WHAT I NEED


Captain Morgan's Parrot Bay Coconut Rum
Jones Cream Soda
orange juice
lemon juice
ice

WHAT I DO

In a brandy snifter over ice, fill the bottom ¼ with Jones Cream Soda, fill just over the ½ mark with Coconut Rum. Add ¼ orange juice and a splash of lemon juice, then top with rum to taste. Stir well.

Lemon Beef

WHAT I NEED


beef chuck for stew
lemon juice
worchester sauce
black pepper
lemon pepper
white rice

WHAT I DO

In a deep wok, dump all beef chuck and juices. Pour enough lemon juice to cover the bottom of pan 1/8th inch, drizzle worchester sauce over meat. Liberally coat tops of beef with lemon pepper and dust with black pepper afterwards. Turn eye to medium-high, cook until sauce soaks in and congeals to a coating, stir beef to keep from burning. Turn heat to high and brown to taste. Makes 2 servings, served over white rice.

Peppered Beef over Rice

WHAT I NEED


Beef chuck for stew
Worchester sauce
Onion (minced)
Onion powder
Garlic salt
Crushed red pepper
Black pepper
White rice

WHAT I DO

Split the beef into two bowls, making sure none of the meat is stacked and at least one side touches the bottom of the bowl. Pour w. sauce over the meat, letting it accumulate to about a centimetre in the bottom of the bowl. Liberally sprinkled minced onion, onion powder, garlic salt, red and black pepper. Simultaneously, begin boiling white rice. Allow meat to marinate 10 min before dumping in pan. fry non-marinated side first, pouring the marinade in pan with meat. Fry to taste. Pour over rice, repeat with second bowl. Mix meat into rice when finished, serves one.

Tip of the Banana

WHAT I NEED


One Large Ripe Banana
Jumex Strawberry-Banana juice
Icebrg Vodka
Milk
Sugar
Hazelnut Creamer
Ice

WHAT I DO

Fill the cup of ice a little under half-way with ice, filling the rest with banana, chunked. Fill bottom 1/3 with vodka, 1/3 Jumex, top off with 1/3 Milk. Add 2-3 tbsp sugar and 1 tbsp creamer. Blend until smooth. Makes one serving.

Italian Fried Chicken

WHAT I NEED


boneless skinless chicken breasts
eggs
italian style breadcrumbs
vegetable oil
spices

WHAT I DO

Rinse chicken thoroughly. Toss in bread crumbs, dip in egg, toss in crumbs again until completely covered. Repeat until all chicken is breaded. Heat oil in a frying pan until hot, throw chicken in carefully. Turn often, making sure not to burn. Toss garlic salt, chives and onion powder as desired to each side. Remove when outside is medium to dark brown.

Italian Baked Chicken

WHAT I NEED


boneless skinless chicken breasts
mayonaisse
italian style breadcrumbs
aluminum foil

WHAT I DO

Rinse chicken breasts and set aside. Coat with mayo, toss in crumbs until covered, turn foil around. Repeat until all chicken is breaded. Preheat oven to 350ºF and cook for 20-25 minutes or until properly finished.

Sex Cookies

WHAT I NEED


4 1/2 c. flour
2 tsp. baking soda
2 c. butter
1 1/2 c. packed br. sugar
1/2 c. wh. sugar
2 packs SECRET INGREDIENT
4 eggs
2 tsp. v. extract
4 c. semisweet chocolate chips

WHAT I DO

Sift together flour and baking soda, set aside. In a lg. bowl, cream together butter, br. sugar and wh. sugar. Beat in SECRET INGREDIENT until blended. Stir in eggs and vanilla. Blend in flour mix. Stir in chocolate chips. Drop cookies by rounded spoonfuls onto ungreased cookie sheet. Bake 10-12 minutes at 350ºF. Makes almost 12 dozen.

Banana Shake

WHAT I NEED


1/2 c. milk
3 packets sugar
3 ice cubes
1 tsp. v. extract
2 bananas

WHAT I DO

Combine all ingredients in blender. Blend at High speed until smooth. Serve immediately. Makes one 12 oz. serving.

Fudge

WHAT I NEED


4 1/2 c. wh. sugar
12 oz. evap. milk
2 tbsp. butter
pinch of salt
12 oz. sweet baking chocolate
12 oz semisweet chocolate chips
8 oz. marshmellow cream

WHAT I DO

Combine first 4 ingredients in a heavy saucepan, bring mix to boil and cook 6 minutes, stirring constantly. Add remaining ingredients, stir until blended. Pour into buttered 13x9x2" pan. chill. Cut into 1" pieces. Store in airtight container. Makes 6 lbs.

Mexican Wedding Cookies

WHAT I NEED


1 c. butter
1/2 c. powdered sugar
1 tsp. vanilla
2 1/4 c. flour
1/2 tsp. salt
3/4 finely chopped walnuts

WHAT I DO

Mix together butter, sugar and vanilla. Sift together flour and salt, stir in. Add nuts. Chill dough. Roll into 1" balls. Place on ungreased cookie sheet. Bake until set at 400ºF. While warm, roll in powdered sugar. Cool.

Chango Bars

WHAT I NEED


1/2 c. butter
1/2 c. margarine
2 c. br. sugar
3 eggs
2 1/3 c. flour
1 tbsp. baking powder
1 tsp. salt
1 c. chocolate chips
1 c. chopped walnuts

WHAT I DO

Soften butter and margarine, cream br. sugar and eggs. Add flour, baking powder and salt. Fold in chocolate chips and nuts. Pour in greased 9x13" pan. Bake 45-50 minutes at 350ºF.

Pumpkin Cheesecake Bars

WHAT I NEED


1 c. flour
1/3 c. packed br. sugar
5 tbsp. butter
1/2 c. chopped walnuts
8 oz. cream cheese
3/4 c. wh. sugar
1/2 c. pumpkin
2 eggs, beaten
1 1/2 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. v. extract

WHAT I DO

Combine flour and br. sufar in med. bowl. Cut in butter to make crumb mixture. Stir in nuts. Set aside 3/4 mix for topping. Press remaining into bottom of 8x8x1.5" pan. Bake for 15 minutes at 350ºF. Cool slightly. Combine cream cheese, sugar, pumpkin, eggs cinnamon, allspice and vanilla in lg. mixer bowl. Blend until smooth. Pour over baked crust. Sprinkle with reserved topping. Bake 30-35 minutes, cool before cutting into bars. Makes 32 1x2" bar cookies.

Maple Twists

WHAT I NEED


3 oz. cream cheese
1/4 c. powdered sugar
2 tbsp. margarine
1 c. br. sugar
1/2 c. chopped nuts
1/3 c. maple syrup
2 c. bisquick
1/4 c. milk
2 tbsp wh. sugar

WHAT I DO

Mix cream cheese, powdered sugar and margarine, set aside. Mix br. sugar, nuts and syrup in ungreased 13x9x2", spread evenly. Mix bisquick, milk, sugar and egg until dough forms. Beat vigourously 20 strokes. Gently smooth dough into ball on cloth-covered board dusted with bisquick. Knead 8 times. Roll dough into rectangle 16x9". Spread with cream cheese mixture. Carefully fold dough lengthwise into thirds. Press edges to seal securely. Cut into sixteen 1" strips. Gently twist ends in opposite directions. Arrange on br. sugar mix. Bake app. 15 minutes at 425ºF. Invert on heatproof serving plate. Refridgerate any left over. Makes app. 16 rolls.

Banana Bread

WHAT I NEED


1/3 c. veg. oil
3 lg. mashed brown banana
1/2 tsp. vanilla
3 eggs
2 1/3 c. bisquick
1 c. wh. sugar

WHAT I DO

Grease bottom of 9x5x3" pan generously. Beat all ingredients with spoon 30 seconds or until smooth. Pour batter into pan. Bake until app. 55-60 minutes at 350ºF. Cool.

Million Dollar Spaghetti

WHAT I NEED


2 lbs ground beef
16 oz. tomato sauce
1 lg Prego sauce
1 sm. box spaghetti
2 tbsp. butter
8 oz. cream cheese
6 oz. sour cream
1 c. cottage cheese
1/3 c. chopped onions (optional)

WHAT I DO

Brown gr. beef and drain, add tomato sauce and Prego. Cook Spaghetti with butter, drain. Mix cream cheese, sour cream, cottage cheese and chopped onion. In lg. baking dish pour 1/2 of spaghetti; cream cheese mixture and then remaining spaghetti. Top with sauce. Back 45 minutes at 325ºF.

Crack-Pie

WHAT I NEED


6 oz. cream cheese
14 oz. sweetened condensed milk
1 egg
3 tbsp. lemon juice
1 tsp. v. extract
1 c. frozen raspberries
1 chocolate graham crust
2 oz. semisweet chocolate
1/4 c. 36% whipping cream

WHAT I DO

Beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add egg, lemon and vanilla. Press raspberries into crust. Pour cheese mix over berries. Bake 30-35 minutes at 350ºF. In small saucepan on low, melt cocholate with whipping cream. Stir until thick and smooth. Glaze over baked cheesecake. Chill.

Italian Fudge-Filled Cookies

WHAT I NEED


3/4 c. veg. shortening
1 c. firmly packed b. sugar
1/2 c. milk
1 egg
1/2 tsp. salt
2 1/2 tsp. baking powder
1/2 tsp. v. extract
3 c. flour

1 lb chocolate chips
2 c. chopped walnuts
2 c. sweetened condensed milk
1 tsp. v. extract
2 oz. unsweetened chocolate
1 tsp. butter

confectioners' sugar

WHAT I DO

In mixer, beat together the shortening and brown sugar. Ass the milk and egg, beat until combined. Add salt, baking powder,vanilla and flour. Mix until thoroughly combined. Remove dough, cutr in half. Roll each half between 2 sheets waxed paper. Peel waxed paper off bottom of one of the layers and place in greased 9"x13" baking pan. Press dough with hands into corners of pan, trimming excess. Peel off waxed paper. Stir filling ingredients, evenly pour over first layer. Removed wax paper from bottom of other dough sheet and set on fudge. Remove top waxed paper. Bake until top is brown, app. 30-35 minutes at 350ºF. Let cool on rack for 4-5 hours or overnight. Sprinkle with powdered sugar and cut into diamonds.
